Nutritional Value Testers

This group is working to test the theory that windowfarmed crops can have a higher nutritional value than store-bought veggies. Researchers correlate high caloric content responsible for American obesity with the degree of food processing and the distance food has to travel (http://web.mit.edu/newsofice/2009/foodshed.html). Windowfarmed crops tend to TASTE better and seem fresher than veggies we get at the grocery store. They are afterall still alive when you eat them and you can make sure they get the best possible nutrients. What kinds of test do we need to set up to test the comparative nutritional value? Let’s do it together and do a great job of documenting our research here on this site.
